Condiments - Indian



Chutney
Any number of sweet and/or spicy sauces, used in Indian dishes.  As with any country, local versions vary by region.  Among the popular ingredients:  coconut, chilis, tamarind, mango, mint and tomato.  (Not all at once, of course...)

Would I try again?  Course...

Masala
A general term, referring to any complex mixture of spices.  As with chutney, you can't speak of only one type of masala...there are variations.  Lots of 'em.

Would I try again?  But of course...


Raita
A yogurt (dahi) sauce, mixed with herbs, and spices.  (In America, it's often paired with cucumber.)  Served as a cooling side condiment, and available in most every Indian restaurant....

Would I try again?  Oh, every once in awhile (if only it didn't have yogurt...)

Sev - Indian
Deep fried little noodles, made from chickpea flour.  Tiny little crunchy things, often poured over snack (chaat) type dishes, such as Sev Puri (hence the name.) 

Would I try again?  Well, these are really more condiment style items...they're not miraculously tasty, but I wouldn't be adverse to trying them in any new dishes.
